Summer Vegetables
Retain your vegetables Color,
Flavor and texture

With the abundance of fresh vegetables in our valley during the spring and summer months, Chef Bill wanted to demonstrate a fast and easy technique for preparing summer vegetables. This trouble-free method helps retain the color, texture and flavor of our summer bounty of fresh vegetables.

Ingredients
Sugar snap peas
Asparagus
Red bell peppers
Carrots
Fava beans
3 tsp. Extra virgin olive oil
2-3 Tbsp. water

The method of cooking used here incorporates sauteing and steaming. As
a healthy alternative to butter, use extra virgin olive oil and limit
the seasoning to a small amount of salt and white pepper.

Add veggies to a medium hot sauté pan with two to three teaspoons of
extra virgin olive oil.

Sauté 1 1/2 minutes and add 2-3 tablespoons of water. Top with lid. Then
steam 2 - 2 1/2 minutes. Drain any excess water. Season to taste and
serve.
