Bill's BBQ Sauce

When
I think of summer, I think of good times, 4th
of July, and BBQ! But you can’t have BBQ
without Chef Bill’s BBQ Sauce. Chef Bill
Hassett of Masterpiece Catering is going to share
how to make a BBQ sauce that is going to livin’
up your meal, his way. The rich sweet Balsamic
gives a wonderful flavor to this smoky treat.
It’s so good you won’t even need a
napkin! Enjoy.
Ingredients:
28oz Ketchup
1 Med. Onion
(minced or process in processor until minced)
4 Cloves Garlic (minced)
2 T. Olive Oil
1 C. Brown Sugar
3/4 C. Balsamic Vinegar
1 T. Mesquite Seasoning
or 1 T. Liquid Smoke
2 tsp. Thyme
1 T. Tabasco Sauce
1 tsp. White Pepper
1 C. WaterInstructions:
Sauté onion in olive oil about 5 min.
Add brown sugar and balsamic vinegar.
Bring to a boil. Reduce heat and simmer 5 min.
Add ketchup, Tabasco, mesquite (or liquid smoke),
pepper and thyme.
Simmer 15-20 min. Add water to thin as needed.
Use as basting sauce or pass sauce at table as
desired.
